Canadian high school student and eco-advocate Lacia-Paige Cummings created a sustainable holiday menu encouraging kids to join the festive kitchen fun while embracing eco-friendly habits. Lacia’s holiday menu features a kid-friendly appetizer, dessert, and breakfast recipe that repurposes holiday party leftovers like cake and cranberries.
As a Cheese4Change winner, a sustainable food program for youth founded by Tre Stelle, Lacia knows first-hand the joy students find in sharing delicious creations that help the planet. Every year, Cheese4Change receives hundreds of entries from students and schools looking for a chance to win $500 to $5,000 annually with some of their favourite recipes and sustainable habits.
Inspired by her victory, Lacia’s created this holiday menu with her favourite recipes from the all new Bites by Tre Stelle APP to encourage kids to cook while embracing the planet.
Lacia’s Holiday Menu
Wonton Napoleons with Herbed Tre Stelle Ricotta
19 wonton wrappers
3 tbsp unsalted butter, melted
Salt and freshly fround black pepper
1 cup Tre Stelle Ricotta Cheese
2 tbsp basil pesto sauce
12 small basil leaves (for garnish, optional)
12 small roasted red peppers (for garnish, optional)

Ricotta Brulée Toasties
1 pound cake or any cake leftover from party
½ cup Tre Stelle Ricotta Cheese
2 tbsp demerara sugar
Fresh fruit for garnish (in-season, locally sourced)

Cranberry Mascarpone “Trees”
3 egg yolks
1 cup icing sugar, divided
2/3 cup whipping cream (35%)
1 (225 g tub) Tre Stelle Mascarpone
16 grahams crackers
1 cup frozen cranberries or leftover cranberry sauce
